Oh my goodness this Virgin Islands Potato stuffing is so delightful, tasty and flavorful. You must absolutely try this recipe!!!
Ingredients
3 large potatoes
1/2 onion finely diced
1/4 red sweet pepper finely diced
2 large tablespoons tomato paste
2 bay leaves
1/4 cup milk (I used evaporated milk)
Seasoning of your choice (I used one Maggie cube)
2 tablespoons butter
1/4 cup raisins
1 tablespoon brown sugar
Method
Peel the potatoes and cut up into small pieces. Put into a pot with water and put the pot on the stove. Allow the water to boil and the potatoes to cook.

While the potatoes are boiling, place another pot on the stove to hot, Add about 2 tablespoons of oil. Add the onion, sweet pepper and bay leaves and sauté for a few minutes.

Add the raisins, sugar, tomato paste, butter. Season to your liking with some salt, black pepper maybe. I used 1 Maggie vegetable cube. Mix the ingredients together and allow to sauté for another few minutes.

After the potatoes are nice and tender, mash with potato masher. Add milk and mix into the mashed potato until nice and smooth.

Add the mixture with the tomato paste and vegetables and mix into the mashed potato. Thoroughly mix together.

Transfer mixture into a baking dish. Set oven to 350 degrees Fahrenheit (177 degrees Celsius) and baked for 15 minutes
