How To Curry Bodi With Potato (Aloo)

 

Curry bodi with potato (aloo)

Ingredients
Bodi
1 potato
1-2 tablespoons oil
1 tablespoon curry powder
all purpose seasoning
seasoning peppers finely chopped
small onion finely chopped
Dried parsley

Method
Cut up the bodi as demonstrated in the video below, wash thoroughly and set aside.  Cut up the potato into small chunks.

Put a pot on the stove and allow to hot.  Add the oil, curry powder, seasoning peppers, onion and allow to sauté for a few minutes.  

After the curry has fried up for a few minutes, add the bodi, potato and mix together well.  Season with the all purpose seasoning and dried basil leaves or any seasoning of your choice.  Add some water and allow the ingredients to cook properly. Cooking time should be approximately 20-25 minutes. 

Curry bodi with potato (aloo) can be served with white rice or roti.
