How To Make Pig Foot Souse

What is souse? Souse, a Caribbean dish, served cold, that traditionally consists of pickled pig meat in a clear broth flavored with various seasonings.

Ingredients
1 pound of pig feet
2 shado beni leaves
juice of one lime
1/2 teaspoon black pepper
1 onion
1 cucumber
2 sticks of chive
salt to taste
2 garlic cloves
1/4 hot pepper
2 cups water
Method
Wash the pig feet thoroughly and place into a pressure cooker with some water and put on the stove.  Allow the pig feet to tenderize.  This should take about 15-20 minutes for the pig feet to get nice and tender.

Wash the cucumber and slice very thinly with the skin on.  Cut off a small piece of the hot pepper and cut up into very very small pieces.  Finely cut up the chive, onion and shado beni.  Grate the garlic.

When the pig feet are tender, throw out the water and wash the pig feet.  Place into a mixing bowl and add 2 cups of water.

Add all the ingredients that were previously chopped up etc, lime juice, salt and black pepper.  Mix together well.  Allow the ingredients to marinate for about 15-20 minutes.  Serve.
