It was my initial intention to make a carrot and raisin rice for my Christmas lunch then recently I finally got the recipe for a Trinidad Christmas Rice and trust me this Christmas Rice is the boom dot com.
Ingredients
1/4 cup yellow sweet pepper finely diced
1/4 cup red sweet pepper finely diced
1 teaspoon ginger finely grated
2 garlic cloves finely grated
1/4 cup red onion finely chopped
3 tablespoons parsley finely chopped
1 teaspoon fine leaf thyme
1 teaspoon rosemary finely chopped
1 cup rice cooked
2 tablespoons slivered almonds
3 tablespoon raisins
All purpose seasoning
3 tablespoons grated carrot
Method
Put a frying pan on the stove, allow it to hot and add 3 tablespoons cooking oil. Add the onion, garlic and ginger and allow these ingredients to sauté for a few seconds. Add the red and yellow sweet peppers – sauté for a few seconds.
Add the cooked rice, parsley, celery, thyme all purpose seasoning, almonds, raisins and rosemary. Mix together well. That’s it!
The hardest part of this recipe is prepping the ingredients – alot of chopping!
