When pigeon peas are in season you can purchase fresh pigeon peas at the farmers market.  Most times they are unshelled.  You will then have to remove the peas from the pods.  This is a timely process which some people enjoy, personally I don’t.  You might also get the fresh peas already shelled at some grocery stores.

Some people have the luxury of growing the pigeon peas in their back yard.

Ingredients
2 pounds fresh pigeon peas
2 tablespoons oil
2 garlic cloves finely chopped
1 cup pumpkin cut up in to small pieces
1/2 teaspoon black pepper
smoked bones (optional)
1 onion finely chopped
1 teaspoon brown sugar
1 tablespoon homemade green seasoning
1 teaspoon homemade pepper sauce
2 teaspoons soya sauce

Method
Put a pot on the stove and allow it to hot.  Add the oil and allow the oil to hot.  Add the garlic and onion and allow them to sauté for a few seconds.  

Add the smoked bones (optional), pumpkin, brown sugar and black pepper.  Mix together well.  Add the pigeon peas and mix.  Add the homemade green seasoning, mix, cover the pot and all the ingredients to steam for a few minutes.

Add the pepper sauce, soya sauce and mix.  You will need to add some water (about 2 cups) to allow the peas and pumpkin to fully cook.  Note:  If you are not adding the smoked bones, you will have to add salt or your favorite all purpose seasoning for flavor.

Cooking time 20-30 minutes.  To test to see if the peas are nice and tender, remove one from the pot and gently squeeze between thumb and index fingers.  If the pea fall apart then you know they are done and you can turn off your stove. Enjoy!
