Trinidad and Tobago popular street food - Doubles


Sorry to disappoint you ....  This is not a recipe, just a photo of a Trinidad and Tobago popular street food - doubles that was home made.  My cousin sent me this photo.

Trinidad and Tobago popular street food Doubles.  Its basically a fried dough sandwich.  The sandwich is made with two pieces of bread which is fried dough - called Bara and the filling is cooked channa aka chick peas.  You can find doubles vendors on basically every corner in Trinidad and Tobago.  The vendors add sauces like:  tamarind sauce, cucumber chutney, pepper sauce and maybe shado beni chutney. These doubles cost about five Trinidad and Tobago dollars.  Very delicious

7 Things To Do During COVID-19 Quarantine 😷 2020

Many people find that they have alot of spare time on their hands during COVID-19 quarantine, lockdown, curfew period. The following are a few suggestions of what you can do to keep you occupied. If you have any suggestions to add to this list, leave it in the comment section.

1. If you are new to new to this channel, start by binge watching my videos, like them, leave a comment and why not subscribe!!!!
2. Take the opportunity to develop your chopping - knife skills. There are many tutorial videos on YouTube that demonstrate the different techniques, select one and practice it.
3. Always wanted to have a kitchen garden or even a flower garden? Now is the time to work on that project in your back yard. If you don't have yard space, you can grow your kitchen garden inside your house.

4. Reach out to family members and friends that you have not contacted in a long time. Use the features (such Whatsapp, Facebook Messenger, Skype and Facetime) that are free so you would not incur a huge telephone for yourself and the other party.


5. Start a journal recording your experiences, emotions during this COVID-19 pandemic. Who knows you can might develop your notes to a book and maybe a best seller!!!
6. I am sure you are like me and are receiving alot of videos via Whatsapp, about the COVID-19. These videos and photos take up alot of space on your phone. Use the time to clean up your phone - make space on your phone by deleting all the unwanted videos and photos.
7. Learn something new like playing instrument, learn how to knit. There are tutorial YouTube videos on basically any topic. If you are a YouTuber like me, maybe now is the time to learn how to use a new video editing software.

Fry Bakes & Sardines - Today's Breakfast During 24 Hours Curfew In Tortola British Virgin Islands - April 24, 2020 - 😷 COVID-19



My humble Breakfast this morning: Fry bakes and sardines. I ran out of butter so I used oil to make the fry bakes! Perfect and delicious!

I ordered some items from a local grocery story for the first time yesterday. I ordered some tomatoes, limes, potatoes and onions. The items were delivered to my home.

I was surprised at my emotions though, when the guy arrived at my home with the delivery, I was a bit hesitant on how I should react to him. I was mindful about keeping the 6 feet social distancing and hesitated to approach him to give him the money and also collect my goods. It was a weird feeling. After he left, I washed each item thoroughly!

Recipe For Homemade Pineapple Jam Recipe Without Preservatives



Hey hey hey folks, did you know that pineapples are incredibly versatile and can be consumed in a variety of ways?  Homemade jam (without preservatives) is one of those ways. 

Homemade pineapple jam is a must for any festive season.  Not only can you control the amount of sweetness, but the taste is totally different than the shop bought version.  This version of pineapple jam is so much easier than the grated version.  The entire pineapple is blended with the exception of the core.  This also yield a slight sweet sour flavor to the jam.

Ingredients
1 ripe pineapple
1 cup of sugar

Method
Use a sharp kitchen knife and cut off the top and bottom of the pineapple and proceed to peel the pineapple.  After all the skin (you can made a juice with the pineapple skin) has been removed, dig out the black spots of the pineapple.  Cut up the pineapple into small pieces.  Place enough of the pieces of pineapple into blender (to get about 2 cups) and pulse.  You might need to add a small bit of water to the blender to get it going.  If you have a good food processor, you would not have to add any water.

Put the blended pineapple (2 cups) into a pot.  Put the pot on the stove and add the sugar.  Stir constantly. When the pineapple begins to boil, turn down the fire to low and allow the pineapple to dry down and thicken.  This process should take about 15 minutes and the mixture needs to be stirred constantly.  

Turn off the stove and allow the jam to cool.  Transfer to mason jar. Refrigerate.


What is a Mason Jar?  Mason Jars primary purpose were for canning and food preservation back in the days when refrigerators were not easily available.  The lid has two parts, a lid with a rubber ring on the underside, which creates a vacuum seal (which is so integral for safe canning), and an outer band with screw threads that are reusable.

Mason Jars come in different sizes and can be used in a variety different ways.  Here are just a few ways they can be used:  Container gardening, candle holders, tooth brush holder, vase and bathroom storage.  Some mason jars are designed with a handle and looks like a beer mug.  You can enjoy your favorite beverage or smoothies in these types of mason jars.

Recipe For Sorrel Jam Without Preservatives



Ingredients
3 pounds of sorrel petals
small piece of ginger
cinnamon stick
3/4 cups of sugar

Method
Put the sorrel petals, ginger and cinnamon into a large pot, fill the pot with water.  Put the pot on the stove and allow the water to boil for 10-15 minutes.  

Turn off the stove and allow to cool.  Pour out the water (you can add sugar to this water and make a sorrel drink) that the petals were boiling in.  Transfer the piece of cinnamon that was boiling with the sorrel petals to the bowl with the sorrel water.  Put the boiled sorrel petals with the piece of ginger and a small bit of water into a blender and blend that up.

Transfer to a pot and put the pot on the stove.  Add the sugar and allow to boil.  Stir constantly and allow the majority of liquid to boil down and the mixture to get nice and thick.  Taste, you may need to add more sugar. 

Allow the mixture to cool and transfer to a mason jar. Refrigerate.

Recipe For Homemade Guava Jam Without Preservatives

Homemade Guava Jam Recipe

Ingredients
4 cups of diced ripe guava 1/2 cup of brown sugar 1 teaspoon lemon juice A piece of ginger

Method
Cut off the top part of the guavas and cut up each guava into small pieces. Place the cut up guavas (4 cups) into a pot. Fill the pot with water (about 3-4 cups of water) and put on the stove. Cover the pot. When the water comes to boil, lower the heat to medium and remove the cover. Allow the guava to cook for about 15 minutes. You can add a piece of ginger for extra flavor.

Turn off the stove and allow the contents of the pot to cool. Pour out liquid into another pot - use a cheese cloth to capture the cooked guava pulp. Add some water, the sugar and lemon juice and put the pot on the stove. Allow the liquid to boil and thicken. Turn off the stove.

Allow the jam to cool and it will come together nicely. Transfer to a mason jar. Refrigerate.

Homemade Jam Recipe With Ripe Mangoes Without Preservatives

Ingredients
2 ripe mangoes
juice of 1/2  lemon
1 cup granulated sugar
1/4 cup water

Method
Using a sharp kitchen knife peel the mangoes and cut up into small pieces. Using a hand blender, make a puree with the cut up mangoes.  Transfer the mango puree to a sauce pan and put the pan on the stove.  Put on the stove and stir the puree.  Add the water, lemon juice and sugar.  Adjust heat to high. Stir continuously.  When the mixture begins to boil, adjust the heat again to medium low.  Continue to stir.

The mixture will eventually get nice and thick.  Turn off the stove and allow the jam to cool.  Transfer to a mason jar.

What Is The Difference Between Jams and Jelly?

I have a few jam recipes on my channel and never thought that there was a difference between jams and jelly.  As I watched my friend Heather of All Around Vegan latest video - Papaya Jam, I learned about the difference.

What is the difference between jams and jelly?  In jelly, the fruit comes in the form of fruit juice. Jelly has the smoothest consistency and is usually clear. In jam, the fruit comes in the form of fruit pulp or crushed fruit.


I have the following jam recipes on my channel.  Mango Jam, Sorrel Jam, Pineapple Jam, and Guava Jam all made from the raw fruit.  I am now motivated to make a pineapple and papaya jam and even do some jellys.  What do you think?

What's For Dinner - April 14, 2020 During 24 Hours Curfew On Tortola BVI - 😷 COVID-19


Last night I had to make some bread and also felt like making something different, something more on the sweet side.  I remembered seeing a small box of raisins in the fridge so I thought I would make some type of raisin cinnamon bread.  But the cinnamon raisin bread was too complicated for the mood I was in.  Plus the box of raisin only had a small amount of raisins in the box.  

I wanted simple recipe.  So I made my homemade bread and simply rolled out one of the pieces of dough and applied a mixture of brown sugar, cinnamon and nutmeg to it and rolled up the dough.

Recipe For Yellow - How To Make Saffron Rice - Turmeric Rice

Ingredients 1 1/2 cups rice 1 1/2 cups mixed vegetables 1 cup of finely chopped red onion small leaf thyme 1/2 teaspoon saffron powder or turmeric powder 1 teaspoon oyster sauce 1 teaspoon pepper sauce (optional) salt and black pepper to taste 1 tablespoon oil

Method
Put a pot on the stove and add one tablespoon of oil. Allow the oil to hot and add the chopped onion and saute for a few minutes. Add the peas and carrots and stir. And the rice and your favorite herbs and stir.

In a measuring cup with 2 cups of water, add some saffron powder or turmeric powder and oyster sauce (you can add your favorite seasoning instead) stir. Add this mixture to the pot with the rice and stir. Cover pot and allow rice to cook. You may need to add another cup of water for the rice to fully cook.

How To Make A Bahamian Lobster Tail Salad

I had a lobster (that my son gave me) in my freezer for a few days and pondered about what I should make with it. I eventually decided to make a lobster salad Bahamian style only to realize that I did not have any sweet peppers.
A few days later he bought me some orange sweet peppers and limes and was so excited that I can now make this Bahamian salad.

Ingredients
1 lobster tail
small piece of green sweet pepper
1/2 white onion
1 small tomato
limes

Method
Using a very sharp knife, finely chop the vegetables and set aside.  Put the lobster tail in a pot of water and put the pot on the stove to allow the water to boil and lobster to cook.  When the lobster tail is cooked and cool, use a kitchen scissors to cut the back of the lobster tail.  Remove the flesh from the shell and put into a bowl with water.  Add some lime juice to reduce the fresh smell.

Finely chop the lobster tail and put into a mixing bowl.  Add the finely chopped vegetables, juice of one lime (you can use this lemon/lime squeezer to extra the lime juice from the lime) and some salt.  Mix together well.  Serve.

Recipe For Vegan Fry Bakes

Are you on a vegan diet and enjoy a good fry bake?  Well you can now your favorite bread that is vegan friendly.  What are bakes?  Bakes are very popular in the Caribbean islands.  There are a few variations to the recipe and called different names.  Bakes is basically bread made without eggs and milk and fried.

Ingredients 
2 cups all purpose flour 
1/2 teaspoon salt
1 teaspoon baking powder
2 tablespoons brown sugar
2-3 tablespoons of coconut oil
1/2 - 3/4 cups lukewarm water

Method 
In a mixing bowl add all the dry ingredients and mix together well.  Add the coconut oil and mix in with the dry ingredients.  Gradually add the lukewarm water and mix in with dry ingredients.  Form into a dough.  Cover with bowl with a damp paper towel and allow the dough to rest for about 10 minutes.

After that time has passed, knead the dough again, it will be smoother after this second kneading of the dough.  Separate into small pieces and fold into balls.  You would get about 6 balls with this recipe.  Flatten each ball into a circle shape.

Put a generous amount of oil into a deep pot.  Allow the oil to hot and lower the fire to medium heat.  Put the pieces of dough into the hot oil and allow each piece of dough to get golden brown on the bottom.  Turn over and allow the other side to get golden brown.  Remove from the oil and place on a plate lined with some paper towel.

French Toast Omelette Sandwich - Today's Breakfast During 24 Hours Curfew In Tortola British Virgin Islands - April 10, 2020 - 😷 COVID-19

Simple Omelette Breakfast Sandwich
Today's breakfast was a delicious omelette sandwich prepared very interestingly.   The first thing I did was crack one egg into my measuring cup and seasoned it with some garlic powder, seasoning salt, onion powder and parsley flakes.  I added some pepper flakes to prepare my egg.  My husband does not like the  pepper flakes.

Put a frying pan on the stove, allow it to hot and spray with some non stick spray.  Next pour the seasoned raw egg into the frying pan. Spread out the mixture in the pan.

Place two slices of bread (I used my homemade bread when making this sandwich) on top of the seasoned egg mixture as seen in the image below.  Place the bread in such a way that the bottom of the 2 slices of bread are facing each other.

Using a spatula, gently flip the omelette over so the slices of bread will now be at the bottom

Fold in the pieces of omelette that are hanging out.

Fold over ole slice of bread to form a sandwich and remove from the frying pan.

Today's Lunch April 8, 2020 During 24 Hours Curfew On Tortola British Virgin Islands - 😷 COVID-19 | Sharing My Craving To Eat Something Sweet



Today's lunch:  Stewed local fish - haines, cornmeal dumplings and boiled potato!

So a few evenings ago I had a craving to eat something sweet.  I made a chocolate cake a few weeks ago so I decided against that this time.  

My daughter recommended pancakes but my husband doesn't like pancakes.  Then I thought about making some oatmeal cookies so I watched some YouTube videos to get the recipe but I realized that you had to use a large amount of butter. So I eventually decided against that too.

I was then inspired to make a oatmeal and banana drink.  I have a few ripe bananas in my freezer.  So I did just that.  In my blender I added 2 of the ripe frozen bananas, 2 tablespoons oatmeal, 3 splashes of Angostura bitters, a few drops of cinnamon and blended that up.  

The banana is the sweetener for the drink but since I had a craving for something sweet I added some sugar.  Perfect!!

April 9, 2020:  I just got an idea, maybe next time I could make some french toast!

Recipe For Gluten Free Green Banana Kebab | How To Make Gluten Free Green Banana Kebab


Ingredients
6 green bananas aka green figs
1 onion 
2-3 seasoning peppers or pimentos 
2-3 garlic cloves
salt and black pepper to taste

Method
Cut off the ends of the green bananas and put them into a pot, add water to fill the pot.  Put the pot on the stove and allow the green bananas to cook.  When they are cooked, you can use a fork to pierce them to check to see if they are cooked.  If the fork pierces the bananas easily, they are cooked.  Also before cooking, the bananas skins are a vivid green.  When cooked, the color is a dark green.

Peel when they are cool and place into a mixing bowl. Using a potato masher, mash the cooked green bananas. Finely chop the onion and garlic cloves and add to the mixing bowl with the mashed cooked green bananas.  

If you have a food processor, you can add the cooked green bananas and the herbs and pulse.  Transfer to a mixing bowl.

Mix together well.  Add salt and black pepper to taste.  Take about a tablespoon of the mixture and shape into a ball, then flatten into a circle.  Repeat until all the mixture is used up.

Put a frying pan on the stove to hot.  Add some oil and allow the oil to hot.  Place the green banana kebabs into the hot oil and allow the bottom to get golden brown.  Flip over and allow the other side to get golden brown.  Remove and place in a plate lined with paper towel.

This morning I had a really delicious breakfast of saltfish accra (aka saltfish cakes), cabbage fritters/patties and boiled green bananas.  Absolutely delicious!!!  Surprisingly I did not feel to eat any bread this morning nor did I feel like making any!

How To Make Vegan Cabbage Patties/Fritters Without Eggs

Ingredients
4 cups of cabbage finely chopped
3 garlic cloves finely chopped
1 small onion finely chipped
2-3 tablespoons parsley finely chopped
salt and black pepper to taste
2 tablespoons all purpose flour

Method
You can use a food processor to make these patties.  Place the vegetables and herbs into the food processor until they are all finely chopped.  Transfer to a mixing bowl.

If you don't have a food processor, you will have to finely chop up the cabbage and herbs and place into a mixing bowl.
Season with salt and black pepper and mix all the ingredients together very well.  Taste to see if salt is adequate.

Add the flour and mix together. Add about a teaspoon of water and mix into the ingredients.  You don't want the mixture to be too moist.  If so you will need to add more flour.  Take about one ice cream scoop of the mixture and form into a ball.  Set aside.  Repeat until all the mixture is used up.

Flatten each ball into a circular shape and set aside.  Repeat until all the balls are flatten. 

Put a frying pan on the stove and allow it to hot.  Add some oil and allow the oil to hot.  Adjust flame to medium heat. Add the patties to the hot oil.  Allow them to get golden brown on each side - about 3 minutes on each side.
