In this blog post I share a Trinidad and Tobago sweet recipe called Paime.  Some of the other Caribbean islands prepare something similar and is called ducana or conkie.  Trinidad’s savory to this dish is pastelles.

Ingredients
2 cups fine corn meal
1 1/2 cups grated coconut
1 cup grated pumpkin
1/2 cup raisins
4 ounces butter
1 cup sugar
1 teaspoon salt
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/4 cup water


Method

In a mixing bowl, add the corn meal and other dry ingredients – nutmeg, salt and cinnamon.  Mix together well with a spatula.  Add the butter and mix into the dry ingredients.  I used my hand for this step.


Add the grated coconut, raisins, and pumpkin and mix together well.

Heat some banana leaves on the stove, doing will allow the leaves to be able to fold without tearing.  Separate into smaller packet size pieces.  Cut pieces of twine to tie tie packets together.

Put about 2 tablespoons of the mixture onto a piece of the heated banana leaf and fold.  Tie with a piece of twine.

Continue this process until all the mixture has been used up

Place the packets into a large pot and fill with water.  Put to boil for 45 minutes.  In the video you will see that I filled the pot first then put the packets into the boiling water.  But the packets began to float.  

My mother would normally put the packets in the pot first then fill with water.  Next time I will do it that way.
