How To Make Paime Trinidad Recipe


In this blog post I share a Trinidad and Tobago sweet recipe called Paime.  Some of the other Caribbean islands prepare something similar and is called ducana or conkie.  Trinidad's savory to this dish is pastelles.

Ingredients
2 cups fine corn meal
1 1/2 cups grated coconut
1 cup grated pumpkin
1/2 cup raisins
4 ounces butter
1 cup sugar
1 teaspoon salt
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/4 cup water

Method
In a mixing bowl, add the corn meal and other dry ingredients - nutmeg, salt and cinnamon.  Mix together well with a spatula.  Add the butter and mix into the dry ingredients.  I used my hand for this step.

Add the grated coconut, raisins, and pumpkin and mix together well.

Heat some banana leaves on the stove, doing will allow the leaves to be able to fold without tearing.  Separate into smaller packet size pieces.  Cut pieces of twine to tie tie packets together.

Put about 2 tablespoons of the mixture onto a piece of the heated banana leaf and fold.  Tie with a piece of twine

Continue this process until all the mixture has been used up

Place the packets into a large pot and fill with water.  Put to boil for 45 minutes.  In the video you will see that I filled the pot first then put the packets into the boiling water.  But the packets began to float.  

My mother would normally put the packets in the pot first then fill with water.  Next time I will do it that way.

Virgin Islands Potato Stuffing Recipe

Virgin Islands Potato Stuffing Recipe

Oh my goodness this Virgin Islands Potato stuffing is so delightful, tasty and flavorful.  You must absolutely try this recipe!!!

Ingredients
3 large potatoes
1/2 onion finely diced
1/4 red sweet pepper finely diced
2 large tablespoons tomato paste
2 bay leaves
1/4 cup milk (I used evaporated milk)
Seasoning of your choice (I used one Maggie cube)
2 tablespoons butter
1/4 cup raisins
1 tablespoon brown sugar

Method
Peel the potatoes and cut up into small pieces.  Put into a pot with water and put the pot on the stove.  Allow the water to boil and the potatoes to cook.

While the potatoes are boiling, place another pot on the stove to hot,  Add about 2 tablespoons of oil.  Add the onion, sweet pepper and bay leaves and saute for a few minutes.

 Add the raisins, sugar, tomato paste, butter.  Season to your liking with some salt, black pepper maybe.  I used 1 Maggie vegetable cube. Mix the ingredients together and allow to saute for another few minutes.

After the potatoes are nice and tender, mash with potato masher.  Add milk and mix into the mashed potato until nice and smooth.

Add the mixture with the tomato paste and vegetables and mix into the mashed potato.  Thoroughly mix together.

Transfer mixture into a baking dish.  Set oven at 350 degrees and baked for 15 minutes
