Ingredients

Fresh Tamarind pods
1/2 teaspoon baking soda
2 cups of boiling water
2 tablespoons of sugar
Pepper sauce
Garlic powder
Onion powder
Salt

Method

Remove the casing – hard outside shell of the tamarind.

Pour some 2 cups of boiling in a bowl with the tamarind.  After about 10-15 minutes, use a potato masher and mash the tamarind to separate the seeds from the flesh of the tamarind.

Add 1/2 teaspoon of baking soda to release the acid from the tamarind and continue to separate the flesh of the tamarind from the seeds.

Add two tablespoons of sugar and mix.  As demonstrated in the video below, you may need to boil the liquid a bit to reduce the liquid and allow the sauce to thicken a bit.  Taste and season with garlic powder, onion powder, salt and pepper sauce (optional).
