Ingredients
1 cassava aka yuca root,
2 cups oil
salt
Method
Peel the cassava. Check out these videos on how to peel cassava – my mother’s mother and an easier method in my opinion.
Wash the cassava and grate using the smallest side of the grater. You will notice that there is alot of moisture in the grated cassava. Squeeze out as much of the water as you can. Add a bit of salt and mix together well.
Take out about one teaspoon of the grated cassava and squeeze into a ball. Continue this process until all the grated cassava is used up. Put the oil into a deep pot and put the pot on the stove with medium heat. Allow the oil to get hot. Put the cassava balls into the oil and allow to fry and get golden brown.
Remove from hot oil and place on plate lined with paper towel. I served these cassava fritters with a delicious mango chutney.
Can these be baked for a healthier meal
I have never tried baking these. Most times when I try to bake these types of recipes, they are a bit on the dry side.
