How to make pong plantain

My Trinidadian mother taught me how to make this dish Pong Plantain and I think it’s an African based dish.  The tool that is traditionally used to make this dish is a motar and pestle.

This dish is known as Fu Fu in Nigeria, Mofongo in Puerto Rico and Mangu in Dominican Republic

Ingredients

2 green plantains or semi ripe plantains

Butter

Salt

Method

Peel the plantains, cut into small pieces and place in a sauce pan with water allow the water to boil and the plantain to cook.

Put the hot cooked plantain in a mortar and mash until smooth with the pestle, you can also use the back of a spoon or a food processor for this part of the recipe.
Add a bit of salt and butter. Mix all the ingredients together well.  Form the pong plantain into a ball.  To serve just cut slices of the pong plantain as seen in the video.
This Pong Plantain goes great with a traditional Trinidad and Tobago Dish – Callaloo!  yum!!!
