How To Make Trinidad Sponge Cake Without A Mixer

In this blog post I share how to make a simple Trinidad sponge cake without a mixer – step by step instructions. Making a sponge cake without a mixer brings back so many memories for me because this was the way my mom made her sponge cake when I was a child. And the crazy thing about it she eye balled the ingredients and got perfect results every time.


Ingredients
6 ounces sugar
6 ounces butter
1 teaspoon almond essence
a few drops Angostura bitters
1/4 teaspoon ground cinnamon
4 eggs
6 ounces flour


Method
Put the sugar and butter in a mixing bowl and mix together, until nice and creamy.


In another small bowl, add the eggs, essence and Angostura bitters. Mix together well. Pour liquid ingredients into the bowl with the butter and sugar. Add cinnamon and add all purpose flour gradually. Mix together well.


Grease cake pan with non stick spray or butter and set oven to 350 degrees Fahrenheit (177 degrees Celsius).


Pour cake mixture into greased cake pan. Put into oven to bake for about 35 minutes.


Take out of oven and check to see if the cake is fully cooked by sticking a bamboo skewer into the center of the cake. If it is dry then the cake is thoroughly cooked.
