Ingredients
8 ounces shredded Saltfish (desalted - most of the salt removed)
1 onion finely diced
1 tomato finely diced
3 garlic cloves finely chopped
1 stick chive finely chopped
black pepper
pepper sauce or a few pieces of hot pepper (optional)
3 whole garlic cloves
2-3 tablespoons of oil
Method
Put the saltfish, onion, garlic, chive, into a mixing bowl. Mix these ingredients together well.

Method
Put the saltfish, onion, garlic, chive, into a mixing bowl. Mix these ingredients together well.
Place a sauce pan on the stove and allow to hot. Add some oil and 2-3 whole garlic cloves. Let the garlic to fry, they will begin to burn a bit.
Turn off the stove. Pour the hot garlic flavored oil over the saltfish mixture in the mixing bowl. Mix together well. Add the tomatoes and black pepper. Transfer to serving dish until ready to serve.
