What is Johnny CakeJohnny Cake is fry bake which is basically a piece of bread dough that we deep fried in the Caribbean. It is made in many of the different Caribbean islands with slight variations and known by different names.


Ingredients
3 1/2 cup all purpose flour
1/3 cup sugar
2 1/2 tablespoons shortening
1 1/4 cups of milk
3 teaspoons salt
1/2 tablespoon baking powder


Method
Add all the dry ingredients into a mixing bowl and mix together well.
Add the shortening and mix into the dry ingredients.
Gradually add the milk and form into a dough.
Allow the dough to rest for about 10 minutes and knead again until it is nice and smooth.
Cover with a damp paper towel and let the dough rest again for 15 minutes.
Separate dough into small pieces (you can use a scrapper to do this) and roll into balls.  Flatten each ball into circular shaped.

In a frying pan, add some oil and allow it to hot.  Put some of the circular shaped dough into the frying pan with the hot oil and allow the bottom of the pieces of dough to get golden brown.  Turn them over and allow the other side to get golden brown.

Remove from frying pan and place in a plate lined with paper towel. Continue this process until all the dough has been used up.  Enjoy!
