How To Make Moist Wholewheat Bread

Diabetics are recommended to eat wholewheat bread instead of plain white bread.  My husband is diabetic and totally opposed to me serving him wholewheat bread until recently when he had a foot injury and had to be hospitalized for 2 days.  Now I use the recipe below frequently to make my wholewheat bread and I am super impressed with the results, my husband enjoys it too.

Wholewheat breads has to tendency to be a bit on the dry side.  With this recipe my wholewheat breads are always super moist this makes me extremely happy😊😊😊

Ingredients
2 cups all purpose flour
2 cups whole wheat flour
4 tablespoons butter
2 tablespoons brown sugar
1 teaspoon salt
2 tablespoons olive oil
1 pack instant yeast or 1 tablespoon yeast
1 1/14 cup lukewarm water

Method
Put all the dry ingredients into a mixing bowl.  Mix together well.

Add the butter and incorporate into the dry ingredients.  Gradually add the lukewarm water mix ingredients together and form into a dough.

Pour the olive oil and knead into dough

Cover with damp paper towel and allow dough to rest for about 30 minutes.  The dough will rise and increase double the size. Uncover the bowl with the dough, punch down on it.

User a dough scraper, separate the dough into two pieces.

Grease two bread pans and  Set oven to 350 degrees Fahrenheit /177 degrees Celsius.  Knead each piece of dough, fold (as seen in video) and place into greased bread pan.  Put bread pans into the oven.  Baking time 25-30 minutes

Ok okay I know you are excited to cut a slice of your hot homemade wholewheat bread but allow it to cool a bit before cutting a slice.  I notice that when I cut the bread when it is fresh out of the oven, the bread gets squeezed up.  So I wait a bit then I cut the bread with a bread knife.

How To Make Trinidad Sweet Bread

Ingredients
4 cups all purpose flour
4 teaspoons baking powder
1 cup granulated sugar
1/2 cup raisins
2 teaspoons almond essence
1 cup melted butter
1 cup mixed peel
2 eggs
2 cups grated coconut
3/4 milk

Method
Put all the dry ingredients into a mixing bowl and mix together well.

In another mixing bowl or large measuring cup, add the wet ingredients like the eggs, almond essence, melted butter and milk.  
Whisk all these ingredients well.

Gradually pour the wet ingredients into the bowl with the dry ingredients and mix together well.

Grease bread pans and transfer the mixture to the greased bread pans.

Set oven to 350 degrees Fahrenheit /177 degrees Celsius

Put bread pans into the oven.  Baking time 35-45 minutes.

Satfish Accra Trini Style |:| Trinidad And Tobago Food

Trinidad Saltfish Accra Recipe

Ingredients
1 cup saltfish (desalted - most of the salt removed)
2 teaspoons baking power
1 teaspoon black pepper
1 tablespoon homemade green seasoning
2 teaspoons homemade pepper sauce (optional)
1/2 cup all purpose flour
1/2 cup of water
1 cup oil for frying

Method
Add all the ingredients except the water into mixing bowl and mix together well.

Add the water and mix together well - until you get a semi runny consistency.

Cover the bowl with the mixture and allow it to rest for about 10-15 minutes.

Put a frying pan on the stove to hot.  Add the oil and allow it to get hot.

Put a tablespoon of saltfish mixture into the frying pan with the hot oil.  Allow the bottom to get golden brown, turn over and allow the other side to get golden brown.  

Remove from hot oil and place on plate lined with paper tower. Repeat until all the mixture has been used up.

Coconut Bake Trini Style

Ingredients as listed in video
1 Pound (1 1/2 cups) all purpose flour
1 tsp salt
1 tsp baking powder
1 tbsp butter
1 tbsp lard
1/2 cup of grated coconut (depending on the size of the bake)
1 tbsp brown sugar
1 tbsp oil
1/2 tsp yeast

Revised recipe:
Ingredients
1 1/2 cups all purpose flour
1 teaspoon salt
2 tablespoon brown sugar
1/2 cup grated coconut
1 tablespoon yeast
1 tablespoon butter
1 tablespoon Cisco shortening
coconut milk (enough to form dry ingredients into a dough)

Method
Put all the dry ingredients into a mixing bowl and mix together well.

Add the butter and shortening.  Incorporate into the dry ingredients.

Add the coconut milk and form into a dough.  Cover the dough with a damp paper towel and allow the dough to rest for 10-15 minutes.


Knead dough again.  Roll out dough with rolling pin into a circular shape.

Grease baking tray maybe with some non stick Pam spray and put the rolled out dough into the baking tray.

Stick the dough with a fork as seen in the video. Set oven to 350 degrees

Put baking dish with dough into the oven and allow dough to bake.  Baking time about 25 minutes.

Saltfish Buljol Trini Style

Ingredients
8 ounces shredded Saltfish (desalted - most of the salt removed)
1 onion finely diced
1 tomato finely diced 
3 garlic cloves finely chopped
1 stick chive finely chopped
black pepper
pepper sauce or a few pieces of hot pepper (optional)
3 whole garlic cloves
2-3 tablespoons of oil

Method
Put the saltfish, onion, garlic, chive, into a mixing bowl.  Mix these ingredients together well.

Place a sauce pan on the stove and allow to hot.  Add some oil and 2-3 whole garlic cloves.  Let the garlic to fry, they will begin to burn a bit.

Turn off the stove.  Pour the hot garlic flavored oil over the saltfish mixture in the mixing bowl.  Mix together well.  Add the tomatoes and black pepper.  Transfer to serving dish until ready to serve.

This dish greats goes great with Fry Bake or even some homemade bread!!!  YUM!!!  Enjoy!!

How To Make Johnny Cake - Fry Bake - Virgin Islands Recipe

Virgin Islands Johnny Cake Recipe

What is Johnny Cake? Johnny Cake is fry bake which is basically a piece of bread dough that we deep fried in the Caribbean. It is made in many of the different Caribbean islands with slight variations and known by different names.

Ingredients:
3 1/2 cup all purpose flour
1/3 cup sugar
2 1/2 tablespoons shortening
1 1/4 cups of milk
3 teaspoons salt
1/2 tablespoon baking powder

Method
Add all the dry ingredients into a mixing bowl and mix together well.
Add the shortening and mix into the dry ingredients.
Gradually add the milk and form into a dough.
Allow the dough to rest for about 10 minutes and knead again until it is nice and smooth.
Cover with a damp paper towel and let the dough rest again for 15 minutes.
Separate dough into small pieces (you can use a scrapper to do this) and roll into balls.  Flatten each ball into circular shaped.

In a frying pan, add some oil and allow it to hot.  Put some of the circular shaped dough into the frying pan with the hot oil and allow the bottom of the pieces of dough to get golden brown.  Turn them over and allow the other side to get golden brown.

Remove from frying pan and place in a plate lined with paper towel. Continue thus process until all the dough has been used up.  Enjoy!

Black Beans Rice Recipe

Black Beans Rice Recipe
Ingredients
2 cups of black beans
1 cup rice
1 onion finely chopped
3 garlic cloves finely chopped
3 tablespoons oil
1/4 of Turmeric powder
¼ teaspoon ground ginger
1/4 teaspoon black pepper
1/2 teaspoon all purpose seasoning
Approximately 3 cups of water for the rice to be fully cooked.

Method
For this recipe you can use dry black beans or the black beans in the can but of course if using the dry peas, you will have to tenderize (maybe with a pressure cooker or slow cooker) the peas before proceeding.

Put your pot on the stove and allow it to hot.  Add the oil, onion, garlic and saute for 2-3 minutes

Add the black beans and stir in with other ingredients.
Add spices - turmeric powder, salt, black pepper etc.  Stir.
Add rice and mix in with other ingredients.
Add water and allow the rice to cook.
Taste and add additional salt and pepper if desired.


Lentil Peas Patties Recipe |:| Vegetarian and Vegan Recipe

Lentil Peas Patties recipe

Ingredients:
1 cup lentil peas
1 grated carrot
3 garlic cloves grated
1 onion finely chopped
1/2 teaspoon salt
1 teaspoon pepper sauce (optional) - this will make the patties a bit spicy
2 tablespoons all purpose flour
basil leaves finely chopped
2 sticks of chive finely chopped

Method
Put lentil peas in a pot with about 3 cups of water.  Allow the water to boil and the peas to cook and get nice and tender.  this should take about 20 minutes.

When almost all the water has boiled down, turn off the stove and add the carrot, garlic, onion, salt, basil leaves and chive.  Mix together well.

Add the flour and mix together.

Place about a tablespoon of the mixture into the palm of your hand and form into a circular shape and set aside in a plate.  Continue this process until all the mixture has been used up.

Add some oil to a frying pan.  When the oil is hot, put the patties into the frying pan and allow each side to get golden brown.

Remove from the frying and place into a plate lined with paper towel.  Enjoy!!!

Mango Lemonade Recipe🍋

🍡Ingredients
juice from 1 1/2 lemons
1 large mango or 2 medium size mangoes
2 cups water
a few drops of angostura bitters (optional)
About 2 cups of sugar.

Method
Peel the mango and cut up into small pieces.
Place the cut up mango pieces into a blender and puree.  
You may need to add a bit of water to get the blender going.
Transfer the mango puree into a jug, and add the lemon juice, bitters, water and sugar.  Stir.
Taste and add more sugar if desired.
Enjoy!

How To Make A Tasty Corn Pie

Ingredients: 2 cans whole corn 2 cans cream style corn 1 grated carrot 1 cup milk (I used evaporated milk) 1 onion finely chopped 4 sticks of chive finely chopped 4 garlic cloves finely chopped (a garlic press is great for this task) 4 seasoning peppers or pimentos finely chopped 1/2 cup parsley finely chopped (you can also use parsley flakes) 1 3/4 cups Grated cheese grated cheese to garnish 2 tablespoon oil 1 cup corn meal salt and pepper to taste

Method
Put a deep sauce pan on the stove and add 2 tablespoons of oil.

Saute onion, garlic, parsley, seasoning peppers for a few minutes

Add grated carrots, corn, cream corn, salt and black pepper. Mix together well.

Taste for enough salt. Add milk, cheese. Mix together well.
Lower the heat of the stove.

Add corn meal gradually and stir until you get a stiff consistency. Transfer to baking dish

Set oven to 350 degrees Fahrenheit /177 degrees Celsius
Put to bake for 35 minutes

Chick Peas Patties Vegan Recipe - Chick Peas Fritters

Ingredients
1 can chick peas aka channa
 2 stick of chive
 parsley
 2 garlic cloves
 1/2 onion
salt to taste
2 tablespoons all purpose flour
oil for frying

Method
Open the can of chick peas and drain out the water
Put the chick peas into a mixing bowl or a food processor
Using a potato masher, mash the chick peas
 If you are using a food processor add the chive, parsley, garlic and onion.  Pulse.  If not cut up these ingredients finely before adding to mashed chick peas.
Season with the salt and other seasoning of your choice. Maybe some garlic powder and onion powder.
add the flour and mix together
Take out one tablespoon of the mixture and shape into a circular shape.
Put a frying pan on the stove to hot. Add some oil.
Put the patties to fry and allow each side to get golden brown.
Remove from fry pan and place on plate lined with paper towel.

Coconut Fry Bakes

In the Caribbean, we have a dish called Fry Bake. What is Fry Bake? Fry Bake is basically a piece of bread dough (without eggs and milk) that we deep fry. It is made in many of the different Caribbean islands with slight variation and called different names. 

Ingredients:
2 cups all purpose flour
1 teaspoon salt
2 teaspoons baking powder
2 tablespoons brown sugar
2 tablespoons grated coconut
2 tablespoons coconut oil
1/4 cup coconut milk
1 cup of oil for frying

Method
Add all the dry ingredients into a mixing bowl.  Mix together well. Add the coconut oil.  Mix together well. Gradually add the coconut milk.  Mix together well and form into a dough. The dough might be a bit rough at this point.  Cover the dough with a damp paper towel or kitchen towel and allow the dough to rest for about 10 minutes.  After this time has passed, knead the dough again, this time it will be smoother.  Cover again and allow it to rest for another 10 minutes.

After this time has passed, use a dough cutter, to separate the dough into smaller pieces and form into balls.  You should get about 6 balls with this recipe. Flatten each ball into a circular shape.

Put a deep pot on the stove to hot. Add oil and allow the oil to hot.

Set heat to medium. Gently place each piece of circular shape dough into the hot oil and allow to cook.  The bottom side will get brown after about one minute and a half.  Turn over and allow the other side to get brown.

Remove the fried bake from the hot oil and place on a plate lined with paper towel.

Rocky Road Ice Cream Recipe - Made without ice cream maker

I am always excited to find an easy ice cream recipe that does not require an ice cream maker. In this post I show you how to make rocky road ice cream. Yum!!

🍡Ingredients ▪ 2 cups heavy cream ▪ 1 cup condensed milk ▪ 6 tablespoons cocoa powder ▪ 1/2 cup unsalted crushed peanuts ▪ 1 cup mini marshmallows

Method
▪ Pour the condensed milk into a mixing bowl. Add the cocoa powder and mix together well until nice and creamy.
▪ Put the peanuts into a mortar and crush with the pestle. You can also do this process in your food processor.
▪ Blend the heavy cream until stiff peaks have formed. (for best results, put the blades from the mixer and the mixing bowl into the freezer for a few minutes)
▪ Fold in the mixture with the cocoa powder and condensed milk.
▪ Fold in the crushed peanuts
▪ Fold in the marshmallows
▪ Transfer the mixture to a food storage container and cover with lid.
▪ Put the container into the freezer overnight.

Pineapple Upsidedown Cake

🍡 Ingredients: Bottom/top of cake: ▪ 1/4 cup melted butter ▪ 1/2 cup light brown sugar ▪ 6 slices pineapple ▪ 1/2 cup pineapple juice ▪ cherries Main part of the cake: ▪ 1 3/4 cups all purpose flour ▪ 1/2 cup of melted butter ▪ 2 eggs ▪ 1 teaspoon baking power ▪ 1 teaspoon vanilla essence ▪ 1/2 cup granulated sugar ▪ a few drops Angostura bitters ▪ 1/4 teaspoon salt

Method
▪ For the top of the cake, put the brown sugar into a mixing bowl and add the melted butter. Mix together well and set aside.
▪ For the main part of the cake, put the eggs in another mixing bowl and whisk together.
▪ Add melted butter, sugar and mix together.
▪ Add all the other liquid ingredients.
▪ Put all the dry ingredients into another mixing bowl. Mix together.
▪ Gradually add the dry ingredients to the wet ingredients. Mix together.
▪ Add the pineapple juice. Mix together.
▪ In a cake pan, pour in the mixture for the top of the cake.
▪ Put a layer of pineapple slices
▪ Put a cherry inside each the hole of pineapple slice.

Set oven to 350 degrees Fahrenheit /177 degrees Celsius

Ingredients
1 3/4 cups all purpose flour
3/4 cup cocoa powder (I used Hershey cocoa powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
2 cups granulated sugar
1 cup of milk (I used evaporated milk)
2 eggs
2 teaspoons vanilla essence
1 cup boiling water
1/2 cup oil


Method
Put all the dry ingredients in a mixing bowl and mix the ingredients together well.

Put the wet ingredients into another bowl and whisk together.  You can also use a stand mixer  or hand mixer for the process.
Gradually pour the dry ingredients into the bowl with the wet ingredients.  Mix together well.

Gradually and carefully pour in the boiling water.  Stir.
Grease a cake pan.
Set oven to 350 degrees Fahrenheit /177 degrees Celsius

Green Banana aka Fig Souse Recipe |:| Vegan Recipe

🍡 Ingredients:
 5-6 green bananas/figs
 1 small onion thinly sliced
▪ 1/2 cucumber thinly sliced
 salt and black pepper to taste
  juice of half a lime
 a piece of hot pepper (optional)
 4-5 shadon beni aka culantro leaves finely chopped
 4 garlic cloves finely chopped

Method
   Wash the green figs/bananas and cut off the ends.  Put in a pot of water and put on the stove.  Allow the water to boil and the bananas/figs to cook.  That should take about 20 minutes.
After the bananas/figs are cooked and cool, peel and cut up into smaller pieces.  Place in a mixing bowl.
▪ Pour 1 cup of water into the mixing bowl.
Add the sliced onion, cucumber and other ingredients. Mix.
